Grape Sourcing
Grapes for the Compass Chardonnay were selected from vineyards in Mendocino County. In this growing region, bright, sunny days and wide day to nighttime temperature swings allow the grapes to spend additional time on the vine preserving their natural acidity. The grapes are allowed to achieve their full ripeness, creating wine with complex flavors.
Winemaking
This wine was fermented in stainless steel without the use of any oak and with neutral yeasts, to preserve the aromatic and floral aromas and capture the essence of the fruit. The grapes from the North Coast provide a full spectrum of Chardonnay varietal characteristics ranging from green apples to yeasty citrus. With its fruity, aromatic flavors, this wine pairs especially well with fish, like salmon and halibut, and also with light pasta dishes it also would match very well with fresh fruits and cheeses.
